Busser/Food Runner

 

Job Summary:

Under the general supervision of the Maitre D, the Scullery staff will act as support staff for the servers throughout the dining room. Primary duties is to assist in setting up the tables in the dining room for each individual seating, keep tables clean from dirty dishes, debris, soiled napkins and dirty glassware, and also to replenish bread, butter, water as the guest desire.

Qualifications and Responsibilities:

Duties include but are not limited to the following.

Essential Duties and Responsibilities:

Upon arrival – make ice tea, and prepare butter dishes for the entire dining room. Make sure the coffee machine in stocked and ready for business.

Replenish all linen – napkins and table cloths from the linen shed outside, and store them in the cupboards throughout the dining room. Fold napkins in squares for the table set ups throughout the evening (this duty is shared by all dining room staff).

Help the Maitre D and the server set up the tables for each seating, and assist the server in making sure the server have all equipment and material needed for his station, silverware, decanters, glassware, napkins, butter, horseradish, coffee service.

Make sure the floors are clean around the dining room and around the trash cans.

During service the Scullery staff will follow directions from the server – bring bread and/or water to a specific table. Make sure all unused or unneeded settings are promptly removed.

The scullery will help drop food at the tables as the food is delivered from the kitchen.

Replenish bread and water for all guests that needs refills throughout the meal.

Bus the table when it is time, towards the end of the meal, and be prompt and accurate with the bussing. Afterwards – use the Bread Crumber to clean the table.

It is imperative that any dishes going back to the kitchen dishwasher, is cleaned off and stacked neatly for the dishwasher, and that during this process caution is used not to lose any silverware.

Throughout service it is the Scullery’s job to keep all bus stations clean from dirty glasses, dishes and silverware.

In case of a spill or dropped food item, it is the scullery duty to immediately assist the person, staff or guest, in need.

As the dining room empties from one seating it is the Scullery positions duty to inform themselves about the new set up for the new seating, and how the tables are configured. During this time it is important that the Scullery staff follows the directions from the Maitre D and the server, since there might be quick and sudden changes in the set ups.

At the end of the night it is everyone’s job to make sure the dining room is looking pristine, clean, neat and organized. Trashcans emptied. Shelves in the bus stations clean and dust free. The floors free from debris and trash. The extensions positioned to block off the pathway between table 25 and 18 and also blocking between table 9 and the Red Sofas. It is also everyone’s job to make sure candles are turned off, lights turned off in areas of no use, and that the entire area is ready for the next day.

Additional Responsibilities:

  • Maintains effective communication skills by interacting professionally with co-workers
  • Other duties may be assigned by management

Minimum Qualifications and Skill Requirements:

  • Ability to follow verbal instructions
  • Able to pick-up and carry the equivalent of fifty pounds
  • Related experience in a fast-paced environment
  • Ability to operate a dishwasher
  • High school diploma preferred
  • CA Serv-Safe Certified

Physical Demands:

  • While performing the duties of this job, the employee may be required to stand, walk, hear, talk, read, balance, use hands, use fingers, reach, stoop, kneel, crouch, crawl, taste, smell, push or pull for 8 hours. The employee must be able to lift or move objects weighing up to 50 pounds. Ability to go up and down stairs as needed throughout shift with objects up to 50 pounds.
  • Specific vision abilities required by the job include close vision, distance vision, color vision, peripheral vision, depth perception and an ability to adjust focus.
